Brotzeit Brings Spargelzeit to Sing|apore this Spring!

Regarded as a national treasure in the regions of Europe, this highly raved delicacy is not deemed as the King of Vegetables for no reason. As Brotzeit’s very own Group Executive Chef Wolfgang Ranner puts it, the White Asparagus dethrones the German Roasted Pork Knuckle every Spring.

Why is the White Asparagus, a seemingly ordinary food product, anointed as the ‘Underground kind of Vegetables’?

Produced in limited quantity and only harvested in the spring season, a lot of care and dedication is put into growing, handpicking, and the preparation of the White Asparagus. Unlike the commonly produced green asparagus, the White Asparagus is not exposed to sunlight and grows underground.

This Spring, Brotzeit launches its exclusive Spargelzeit menu, bringing you and your family an exquisite and delectable experience. With great passion for taste and quality, Chef Wolfgang Ranner walked us through the journey and inspirations of his creations for this spectacular menu.

For starters, the Garden Salad with White Asparagus ($19) is great as an entrée to kick off the main course. Ladies watching their weight may even partake this alone without guilt. Tossed in balsamic dressing, the White Asparagus is tangy with a savoury crunch, paired with a tasty mélange of fresh fruits such as mandarin organs and blueberries.

The White Asparagus Cream Soup topped with Honey Baked Ham ($16) will blow your mind at your first spoonful. The sweetness of the soup emancipates the natural delicate flavor and texture of the asparagus. The ham slices serve as a great balance to neutralise the sweetness of the soup.

The White Asparagus with Pan-Seared Barramundi ($34) features the classic poached White Asparagus with the freshest, most succulent Barramundi that Chef Wolfgang Ranner personally takes pride in overseeing from the fishery to the kitchen. The Hollandaise sauce, prepared by Chef Wolfgang Ranner, is by far the best condiment to pair with the White Asparagus.

For the sweet-tooth and adventurous food lovers, the White Asparagus, Strawberries and Panna Cotta ($10) is definitely worth a try. With this gastronomical dessert recipe developed by Chef Wolfgang Ranner, be certain that children of all ages will not fuss over having vegetables in a panna cotta served with strawberry puree and freshly cut strawberries.
