Review: Journey to Iloilo at Melt – The World Café

VIBRANTLY RICH IN AROMAS AND COLOURS, TRADITIONAL FILIPINO DISHES AT MELT – THE WORLD CAFE, MANDARIN ORIENTAL

Embark on a journey to the heart of Western Visayas, Philippines, as MELT – The World Café welcomes guest Chef Pauline Gorriceta-Banusing, who showcases a great multitude of remarkable indigenous Illonggo cuisine for a limited time (until 28th June 2014).

Traditional Filipino dishes rely heavily on the use of fresh herbs, spices, fruits and vegetables to balance the full-bodied flavours of seafood and meats.  Appetising salads to kick-start the meal include Pusu Salad made from banana blossoms, Fish Kinilaw, dressed in palm coconut vinegar and spices, and Ensaladang Langka, a vegetarian blend of unripe jackfruit prepared with coconut milk.

Highlights featured at the sumptuous buffet spread will include the signature Chicken Inasal, fragrant grilled chicken marinated in lemongrass and a tantalising medley of spices, Kare-Kare, an enticing oxtail stew of delicious toasted rice and peanut sauce, and Adobong Pusit, baby squids cooked in squid ink and vinegar, alongside the Live Noodle Station serving a hearty bowl of Batchoy – possibly the most famous Ilonggo dish since its introduction in the late 1930s – a piping hot bowl of egg noodles in a robust beef and pork broth, topped with meats, eggs and crisp pork cracklings.

MELT – The World Café also present a Halo Halo station, reminiscent of our much-loved Singaporean dessert, Ice Kachang, a tantalising dessert of shaved ice, topped with various types of jelly, beans, yam, banana and chick peas.  Indulge in the fried Banana and Langka Turon jackfruit spring rolls, soft and custardy Yema Balls, made of egg yolk and milk, or treat yourself to a popular Filipino dessert, Leche Flan, an egg and milk mixture custard capped off with glistening caramelised sugar for a truly gastronomic experience.
